I've recently began looking for non-dairy sources of probiotics (the good bacteria), and my searches brought me to "water kefir". If you are familiar with milk kefir grains at all, these grains are very much the same, except you would soak them in water instead of a milk beverage.To get started, I got all the supplies together which includes, a 2L glass jar, some uncooked healthy sugar, some spring water, and obviously, water kefir grains. They are obtainable on Amazon but I found mine from eBay. If you are unable to locate the grains on these 2 online stores, try searching for 'tibicos' instead which is a name they are commonly referred to as. The grains took about a week to arrive and at that time I wasn't prepared to utilize them so I kept them in the fridge in a sugar solution. They are able to preserve for a couple of weeks in the refrigerator in sugar water. They probably won't reproduce in the fridge, but they will survive. If you require extra time than 2 weeks you just have to change the sugar-water solution.
Once I was all set to make some water kefir I got out a standard recipe and started brewing. It's recommended to keep the grains separate in a cloth bag that will let the sugar solution to enter and at the same time not allow it to merge with the other "ingredients" (for the simple reason that it's just difficult to separate them later).
Regarding water, you can boil tap water to take out the chlorine (then let cool down all the way), or purchase (or obtain) some mineral or spring water. Fill the 2L jar 3/4 of the way and add about 1/2 a cup of sugar. Additionally, add 1 cup of kefir grains to the muslin (or cloth) bag and be ready for them to increase in numbers so leave them some room!
You may add a teaspoon of blackstrap molasses to include further vitamins for the grains to feast on. Also, adding 1/2 teaspoon of baking soda is often recommended. This can help prevent a film from being created on the surface of the water, and also help enhance the grain growth.
Now, you may use any extra flavors by means of berries, or orange slices, a dried fig or two, a couple raisins, ginger, etc.
Cover the container loosely, and allow it to stand in a dark area (cover with a towel if necessary) to ferment and brew your water kefir. Stirring every 12-24 hours is helpful. Avoid permitting anything metal to touch the grains or the water (during or after the brewing procedure) as it can destroy the beneficial bacteria. Let it sit for 2-3 days, checking the taste once or twice a day. If it's very sugary, let it sit a bit longer, and if it has a vinegary flavor it may have stood too long.
Top up the container with some 100% fruit juice if you like. The water kefir may be kept in the refrigerator for a couple of days to a week.
